Pets or Food

Since my lovely wife, cousin and a few of their friends launched their "chew the right thing" website the Ethicurean. We've been spending more time going to farmers' markets to get fresh healthy hormone and pesticide free foods. Bonnie also turned me on to the Fatted Calf an artisanal charcuterie. The duck mousse and sausage we've had from them are delicious. But last Saturday I was intrigued by the rabbit crepinettes, so I asked the man at the table what they were, he said, "do you know what crepinettes are?" "Well no, but I know what a rabbit is."
So a crepinette is a sausage parcel wrapped in caul fat. Yum.
Bonnie wanted nothing to do with it having had a pet rabbit as a child, but I bought a couple of patties to give it a shot. I haven't eaten rabbit since I lived in Holland, where they used to say that eating wild rabbit would give you wild dreams, I don't remember that happening, but wait--did I really live in Holland...
I cooked up the patties when Bonnie was out of the house (at her request) and boy were they ever delicious.
